Chicken Soup for Whatever Ails You

The stomach bug got all three kids. This is the pot of soup that goes on while you wait your turn.

The stomach bug got us! It’s taken down my three kids and I’m so scared it’s gonna get me.

If this doesn’t cure it, in the very least dinner will be made for when it inevitably comes for me.

Instructions

  1. Add the onion, celery and carrots to a Dutch oven with some butter or oil.
  2. Nestle the chicken breast in there. Season with thyme, oregano, salt, pepper, garlic, honey, and lemon juice.
  3. Add 8-10 cups of your favorite stock or broth.
  4. Simmer until the chicken is easily shredded, 20-30 minutes.
  5. Shred the chicken and add your noodles. Cook an additional 10 minutes.

Make it yours

  • The honey and lemon: Not traditional, and the reason this tastes like it is actually doing something for you. Do not skip it.
  • Noodles separately: If you want leftovers that are not mush, cook the noodles on the side and add them per bowl.
